Hello again, One Little Project readers! It’s Alicia from The Baker Upstairs, and I’m back with another delicious recipe to share. These funfetti cake batter pancakes are light and fluffy, perfectly sweetened, and so delicious. They’re the perfect breakfast for any special occasion, and so fun for both kids and adults!

What was your favorite birthday tradition when you were little? When I was a kid, my mom always let us choose the kind of cake we wanted for our birthdays, and every single year, I chose funfetti cake. I loved the bright colors, the classic birthday cake taste, and how pretty the cake always turned out. My mom is a really great cook, but she wasn’t veryinto baking, so most of our cakes were from a mix. It didn’t matter to me at all, though! I loved watching her baking the cake for me, and she usually let me help with frosting it, too.

My birthday is coming up this Sunday, and so I’ve been reminiscing lately about those birthday cakes from when I was a child. These days, it’s usually my husband who bakes a cake for me, but I’m still pretty insistent aboutthose sprinkles. 🙂 These funfetti cake batter pancakes taste just like that birthday cake I remember from childhood, but in pancakeform.They’re the perfect special occasion breakfast!

I was inspired by these funfetti pancakes from Baking Beauty, but I decided to making my own by changing upmy favorite pancake recipewith cake mix and sprinkles. The results were these perfectly light and fluffy, super flavorful, and incredibly delicious pancakes.What more could you ask for in a birthday breakfast?

The full recipe is at the bottom of this post, but here’s what you’ll need:

  • cake mix
  • flour
  • sugar
  • baking powder
  • salt
  • eggs
  • oil
  • milk
  • vanilla
  • sprinkles

The batter is super quick and easy to mix together, and the cake mix adds so much flavor. It’s important to let the batter sit for a few minutes, so it can thicken up just a little. I added thesprinkles after letting the batter sit, so they wouldn’t start to dissolve and bleed their bright colors all throughout the batter.

I used a large skillet to cook my pancakes, but if you have a griddle, it would definitely make things faster. My poor griddle was a casualty of our cross-country move over the summer, and I haven’t replaced it yet. You’ll pour the batter and wait until there are bubbles throughout the batter and the edges look dry, and then flip. I like to use a 1/4 cup measuring cup to pour the batter, so all the pancakes are roughly the same size.

I served mine with whipped cream and extra sprinkles on top, and they were fantastic! The pancakes are sweet enough that they don’t really need syrup (thanks to the cake batter), but the whipped cream added a nice little touch of sweetness. My five year old was very insistent that her pancakes needed syrup, though, so she got some extra sweetened pancakes. She said they were perfect that way! 🙂

Funfetti Cake Batter Pancakes Recipe

These funfetti cake batter pancakes are so fluffy and sweet, and loaded with sprinkles!

Servings: 16 -18 pancakes

Ingredients

  • 2 cups Flour
  • 1/2 cup cake mix
  • 1/4 cup Sugar
  • 5 teaspoons baking powder
  • 1 teaspoon Salt
  • 2 cups milk
  • 1/2 cup oil
  • 2 eggs
  • 1 teaspoon Vanilla
  • 1/3 cup sprinkles plus more for serving
  • whipped cream

Instructions

  • In a large bowl, whisk together the flour, cake mix, sugar, baking powder, and salt. In a medium bowl, whisk together the milk, oil, eggs, and vanilla.

  • Pour the wet ingredients into the dry ingredients. Stir until just combined (small lumps are okay) and let sit 10 minutes. Gently stir the sprinkles into the pancake batter.

  • Preheat a griddle or large skillet over medium heat. Lightly butter the preheated griddle and pour the batter by 1/4 cup scoops onto the griddle (I always use a measuring cup so they're all the same size).

  • Cook 3-4 minutes or until there are bubbles throughout the top of the pancakes, and the edges of the pancakes look dry. Flip the pancakes and cook for another minute or until lightly browned on the bottom.

  • Serve warm with whipped cream and additional sprinkles, if desired.
