Plant-Based Cooking's Top Ten Recipes from 2019 (2024)

Plant-based foods continued to be on the upswing in 2019. More brands jumped into the vegan arena and fast food giants added burgers to their menus. Take Burger King, for example. Burger King grew by 5% during its third quarter, thanks in part to the success of the Impossible Whopper, Burger King’s U.S. same-store sales its largest jump since 2015.

I’ve seen tv commercials about this addition to the Burger King menu. GO VEGAN!

People are getting the message that a whole food eating, plant-based diet is best for your health and longevity and, of course, for animals and the planet, as well.

Look for more plant-based versions of meat, chicken, and fish to hit the market in 2020. I’ve already read that Burger King is launching another soy-based vegan product, Impossible Pork. Vegan “pork” sausage will be rolled out at 139 Burger King locations later this month.

However, I’m sure you know that these versions of fake meat, while great for the planet and animals, don’t usually fit into our healthy goals so stick with WHOLE FOOD plant-based recipes like these below.

Split pea and lentil soup is so comforting on a chilly day. It’s perfect served with a crispy salad and a chunk of crispy whole grain bread. It makes a satisfying meal. The light coconut in this lentil and split pea soup adds a delightful creaminess but you can leave it out if you are avoiding extra fat.

9. SWEET POTATO VEGGIE LASAGNA:
This lasagna is so great you’ll want to make a few batches to have on hand or share with friends. This is a wonderful recipe that is filling without expanding your waistline like the original version could. This dish is the perfect dinner or pot luck “go to!”

8. TURMERIC GINGER ICED TEA:
This turmeric ginger iced tea is a refreshing way to get your body energized, soothed, and cleansed. Perfect summer picnic recipe or served warm during a cold winter day!

7. MULLIGATAWNY SOUP:
Although the ingredient list is long, it’s mostly spices. If you’re staying away from all added oils, you could use coconut extract as a substitute for the lite coconut milk by mixing 1 teaspoon with 2/3 cupnon-dairy milk. It’s certainly creamy enough without it because you’ll be blending part of the soup.

6. BEEFLESS STEW:
This delicious, creamy beefless stew is a healthier take on the original traditional comfort dish. So hearty and satisfying you’ll want to savor each bite. This is perfect for a dinner party or simply dinner with the family and you’ll love the time you save creating this version.

5. HEALING TURMERIC SMOOTHIE:
You may have heard, turmeric is anti-inflammatory and this smoothie has a lovely, creamy flavor. I like to use my Homemade Almond Milk but you could also try one of these delicious Nut, Seed, and Grain-Based Milk recipes. You’ll also need bananas, frozen mango, the turmeric, of course, freshly grated ginger, your choice of hemp, flax or chia seeds, some vanilla extract, cinnamon and just a pinch of ground pepper.

4. Instant Pot BUTTERNUT SQUASH RISOTTO WITH BASIL PESTO:
Topped with a dollop of basil pesto, this dish is delish! Use store-bought cut-up butternut squash for an easy weekday dinner or an elegant dinner party. If you don’t have an Instant Pot, I’ve included stovetop directions.

3. BITCHIN SAUCE:
Tasty saucy goodness that’s great on your baked potato or served with raw vegetables or baked chips, this dip is way healthier than the original which has extra added oil. Made with raw almonds in your high-powered blender.

2. VEGAN HUEVOS RANCHEROS CASSEROLE:
Here’s my healthy take on eating a savory, dinner-inspired dish for breakfast loaded with protein from the tofu scramble and made easier with store-bought sauce.
