Substituting prunes for dates in truffles:

I substituted one of the most common ingredients used in raw truffles – Medjool dates, with dried prunes. Rich in fiber and less sweet and sticky than dates, prunes make the texture of these truffles a little crumby. Using coconut oil and maple syrup helps the mixture stick together.

I also used a special ingredient – maca powder.

I’ve been adding it to smoothies and smoothie bowls for a few years now, but finally decided to add it to theseRaw Prune And Maca Truffles.

I love the flavor of maca. It smells like butterscotch. I’ve also read that it is much easier digested if used in baked goods, but I haven’t tried that.

People also take it as a supplement for different conditions, like enhancing energy or balancing women’s hormones. Feel free to omit the maca powder in the recipe, if you don’t feel comfortable consumingit.

  • prunes
  • walnuts
  • almonds
  • cocoa powder
  • maple syrup
  • coconut oil
  • maca powder

I love raw, vegan truffles, because they are so easy to make and taste great. You can use so many different ingredients and create different flavors.

No refined sugars and lots of protein and fiber. I’ve already shared a few raw truffle recipes, you might want to check out.

These are a little different, because I didn’t use dates to sweeten them.

Instead I used dried prunes. So theseRaw Prune And Maca Truffles are a little less sweet than the other raw truffles, I’ve shared so far.

Also the “dough/mixture” is not as sticky, so if you think this is a problem for you, you might want to use dates.

How to make maca truffles?

  1. In a food processor, place prunes and pulse until 5-6 times. Remove from the food processor. Transfer to a bowl.

  2. Add walnuts and almonds to the food processor and pulse until meal is formed. Transfer to the bowl with prunes.

  3. Add cocoa powder, maple syrup, melted coconut oil and macarons powder. Stir to incorporate.

  4. Using a tablespoon, scoop out equal amounts from the mixture and shape balls.

  5. Roll into matcha powder, cocoa powder, shredded coconut and crushed freeze dried strawberries, if you’d like, or leave plain.

  6. Refrigerate for at least 15 minutes.

How to shape raw truffles?

To shape these you need to apply extra pressure, when rolling, to make then shape into balls. The amount of maple syrup used, also helps them stick together.

They need to be refrigerated for at least 15 minutes, before consuming.

You can just leave them plain, but you know me – I’m not a fan of plain things…

That’s why I rolled some of the into raw cocoa powder (a little bitter!), shredded coconut, crushed freeze dried strawberries and matched powder (extra caffeine!). Use your imagination 🙂

Ingredients

FOR THE TRUFFLES:

  • 1 cup prunes, , pitted (you can soak them in hot water for 10 minutes, then drain, I did not soak them, because they were moist)
  • 1 cup walnuts
  • 1 cup almonds
  • 1 tbsp cocoa powder
  • 1/4 cup maple syrup
  • 3 tbsp melted coconut oil
  • 1 tsp maca powder

OTHER:

  • cocoa powder, , shredded coconut, matcha powder and crushed freeze dried strawberries
